DIRECTIONS
INGREDIENTS
- 4 x salmon fillets
- 1 litre Original Almond Breeze
- 1 tbsp lemon juice
- 3 bay leaves
- 2 cups snow peas
- Salt to season
- 1 1/2 cups fresh dill leaves
- 1/2 cup parsley
- 2 tbsp walnuts
- 2 cloves garlic, smashed
- 2 tbsp parmesan cheese, shaved
- 2 tbsp extra virgin olive oil
METHOD
- Add almond milk, lemon juice, salt and bay leaves to a heavy based fry pan and bring to the boil. Once boiled, reduce heat to low and add salmon fillets. Cook gently for 5-10 minutes until cooked to your liking
- Remove salmon and bring the almond milk back to boil to cook the snow peas for 3-5 minutes. Drain snow peas and set aside with salmon
- To make the dill pesto, add the walnuts, garlic, parsley and dill to a blender and whirl until minced. Add the oil and cheese and process until blended
- Combine salmon, snow peas and dill pesto on a plate and enjoy
