DIRECTIONS
INGREDIENTS
- 2 tablespoons coconut oil
- 4 handfuls of kale, finely chopped
- 1 large brown onion, finely diced
- 1 large red onion, finely diced
- 1 pack of frozen broccoli (defrosted)
- 4 large tomatoes, chopped
- 1/2 cup fresh basil, roughly torn
- Salt and pepper
- 8 large eggs
- 1 cup Original Almond Breeze
METHOD
- Preheat oven to 180 degrees
- Heat the coconut oil in a large frying pan and add the kale, diced brown and red onion, broccoli, tomatoes and basil. Cook for 5 – 10 minutes
- In a separate bowl beat the eggs together with the Original Almond Breeze and season with salt and pepper
- Transfer your veggies into a large baking dish and arrange them evenly and pour over the egg mixture
- Bake in the oven for 25 minutes. Serve with a side salad and enjoy hot or cold
