DIRECTIONS

INGREDIENTS

  • ½ cup butter
  • 1 cup sugar
  • 2 eggs
  • ½ teaspoon vanilla essence
  • 1 ½ cups Unsweetened Almond Breeze
  • 1 ¾ cups self-raising flour
  • ½ teaspoon salt
  • 1 ½ teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • 1 ½  cups blueberries

METHOD

  1. Pre-heat oven to 180 degrees Celsius.
  2. Combine softened butter and sugar, eggs and vanilla. Mix well & slowly stir in milk.
  3. Sift flour and add slowly, stirring/whisking to avoid lumps.
  4. Gently fold in blueberries.
  5. Spoon into a greased muffin tray or muffin cups.
  6. Sprinkle with sugar & bake for 25-30 minutes.
