DIRECTIONS
INGREDIENTS
- 1 litre Original Almond Breeze
- 1 garlic clove, peeled and halved
- 2 sprigs fresh thyme
- 5 x 250g chicken breast fillets
- 2 x cos lettuce hearts, shredded
- 2 red apples, thinly sliced
- 1 cup walnuts, chopped
- 2 celery stalks, chopped
- 2 tbsp lemon juice
- 2 tbsp whole egg mayonnaise
METHOD
- Place the almond milk, garlic and thyme into a deep-sided frying pan over high heat and bring to the boil. Add the chicken, reduce heat and allow to cook, covered for 12-15 minutes until cooked through. Remove chicken and allow to cool
- Combine the cos lettuce, red apples, walnuts and celery in a large bowl and toss
- In a small bowl, mix the lemon juice and whole egg mayonnaise to make a dressing
- Once cooled, use two forks to shred chicken. Add shredded chicken to salad bowl, top with dressing and toss once more
